Ingredients
Scale
For the Soup:
- 4 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter (or olive oil)
- 2 cloves garlic, minced
- 6 cups beef or vegetable broth (low-sodium recommended)
- 1 teaspoon Italian seasoning
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
For the Topping:
- 4–6 slices of French bread (toasted)
- 4–6 slices provolone cheese
- Fresh parsley (optional, for garnish)
Instructions
Caramelize the Onions
- In a large pot, melt the butter over medium heat.
- Add sliced onions and a pinch of salt.
- Stir frequently and cook for 25-30 minutes until onions are soft, golden, and sweet. Be patient!
Build the Broth
- Add minced garlic and cook for 1 more minute.
- Stir in Italian seasoning, black pepper, and broth.
- Bring to a boil, then lower the heat and simmer for 20 minutes.
Toast and Broil
- While the soup simmers, toast bread slices until crisp.
- Preheat broiler.
- Ladle hot soup into oven-safe bowls.
- Place a toasted bread slice on top of each bowl and cover with provolone cheese.
- Broil for 2–3 minutes, until cheese is melted and bubbly.
- Garnish with parsley if desired. Serve hot!
Notes
- Bread Tip: Day-old bread works great; it’s sturdy and holds up under the cheese.
- Cheese Swap: Mozzarella or Swiss cheese can be used if you don’t have provolone.
- Make Ahead: The soup (without bread/cheese) can be made in advance and stored in the fridge for up to 4 days.
