Ingredients
Pancake Batter:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons sugar
- 2 cups buttermilk
- 1 large egg
- 3 tablespoons melted butter (plus extra for greasing)

Mix it up!
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.Wet and wonderful.
In another bowl, whisk the buttermilk, egg, and melted butter until smooth.Make the magic happen.
Pour the wet ingredients into the dry. Stir gently until just combined, a few lumps are totally okay!Heat it up.
Preheat a nonstick skillet or griddle over medium-low heat. Add a light dab of butter to coat the surface.Let’s cook.
Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on top and the edges look set, about 2 to 3 minutes.Time to flip!
Flip carefully and cook for another 1 to 2 minutes until golden brown.- Stack and serve.
Serve warm with maple syrup, fresh fruit, or your favorite toppings!
Notes
✔ No buttermilk? No problem! Mix 2 cups of milk with 2 tablespoons of lemon juice or vinegar and let it sit for 10 minutes before using.
✔ Don’t overmix the batter overdoing it can make the pancakes dense.
✔ Want extra fluff? Let the batter rest for 5 minutes before cooking.
