  • lbs ground venison (lean deer meat)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup low-sodium beef broth or water

Spices & Seasoning

  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper

Instructions

  1. Heat it up!
    In a large skillet, heat olive oil over medium heat.
  2. Build your flavor base.
    Add diced onions and sauté for 3–4 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  3. Brown the venison.
    Add ground deer meat to the pan and cook until no longer pink, about 6–8 minutes. Break it apart with a spatula.
  4. Load the slow cooker.
    Transfer the cooked meat mixture into your slow cooker.
  5. Add the good stuff.
    Stir in beans, crushed tomatoes, tomato paste, and broth.
  6. Season it right.
    Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Give everything a good stir.
  7. Let it simmer low and slow.
    Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  8. Serve it hot!
    Stir gently before serving. Taste and adjust seasoning if needed. Top with your faves: avocado, chopped cilantro, or dairy-free sour cream!

Notes

  • No venison? Ground turkey or lean beef works great.
