Ingredients

For the Dough:

3 cups all-purpose flour

1½ cups unsalted butter (cold, cubed)

2 teaspoons active dry yeast

1 cup warm milk

2 tablespoons granulated sugar

½ teaspoon salt

For the Egg Wash:

1 large egg

1 tablespoon milk

Optional Fillings:

Semi-sweet chocolate chips

Fruit preserves

Almond paste


Instructions

Step 1: Activate the Yeast

In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 10 minutes until frothy.

Step 2: Prepare the Dough

In a large bowl, whisk together flour and salt.

Step 3: Chill the Dough

Roll out the chilled dough into a large rectangle, about ¼-inch thick.

Cut into triangles (like pizza slices).

Add any optional fillings (chocolate, jam, etc.) to the base of each triangle.

Roll each triangle from the wide base to the tip to create a crescent shape.

Step 5: Proof the Dough

Place the shaped Gipfeli on a parchment-lined baking sheet, leaving space between them.

Cover with a clean kitchen towel and let rise for 45 minutes until slightly puffed.

Step 6: Bake to Golden Perfection

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together the egg and milk to create an egg wash.

Brush the Gipfeli lightly with the egg wash.
