Orzo Base:
- 1½ cups orzo pasta
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 small onion, diced
- 1½ cups cherry tomatoes, halved
- 1 cup spinach, roughly chopped
- Salt and pepper, to taste
Harissa Sauce:
- 2 tablespoons harissa paste
- 1 tablespoon tomato paste
- Juice of ½ lemon
- ¼ cup vegetable broth or water
Halloumi Topping:
- 8 oz halloumi cheese, sliced
- 1 tablespoon olive oil
- Fresh mint, for garnish
- Lemon wedges, for serving
Instructions
- Boil orzo pasta according to package directions, then drain.
- Heat olive oil in a skillet. Cook garlic and onion until soft.
- Add tomatoes and spinach; cook until tomatoes soften and spinach wilts.
- Mix harissa paste, tomato paste, lemon juice, and broth. Add this sauce to veggies.
- Combine cooked orzo with veggies and sauce, mixing well.
- In another pan, fry halloumi slices until golden and crispy.
- Serve orzo topped with crispy halloumi, mint, and lemon wedges.
Notes
- Adjust harissa for desired spice.
- Substitute feta cheese if halloumi isn’t available.
- Chickpeas or chicken can be added for extra protein.
