Description

A tasty Mediterranean dish with spicy harissa, crispy halloumi cheese, and soft orzo pasta. Quick, easy, and perfect for dinner.


Ingredients

Orzo Base:

  • 1½ cups orzo pasta
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1½ cups cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • Salt and pepper, to taste

Harissa Sauce:

  • 2 tablespoons harissa paste
  • 1 tablespoon tomato paste
  • Juice of ½ lemon
  • ¼ cup vegetable broth or water

Halloumi Topping:

  • 8 oz halloumi cheese, sliced
  • 1 tablespoon olive oil
  • Fresh mint, for garnish
  • Lemon wedges, for serving

Instructions

  1. Boil orzo pasta according to package directions, then drain.
  2. Heat olive oil in a skillet. Cook garlic and onion until soft.
  3. Add tomatoes and spinach; cook until tomatoes soften and spinach wilts.
  4. Mix harissa paste, tomato paste, lemon juice, and broth. Add this sauce to veggies.
  5. Combine cooked orzo with veggies and sauce, mixing well.
  6. In another pan, fry halloumi slices until golden and crispy.
  7. Serve orzo topped with crispy halloumi, mint, and lemon wedges.

Notes

  • Adjust harissa for desired spice.
  • Substitute feta cheese if halloumi isn’t available.
  • Chickpeas or chicken can be added for extra protein.
